10:00 Arrive at work
When you arrive at work, you immediately change into your uniform and start preparing soup, chashu pork, etc.
10:30 Prepare for opening
After cleaning the restaurant, put up signs and clean tables to prepare for welcoming customers.
11:00 Opening
When the store opens, and customers arrive, all of the staff cheerfully greet them with, "Welcome! Welcome!
Turnover rate is the most important factor in a ramen restaurant, and since many customers are in a hurry, such as office workers on their lunch break, we carefully and skillfully serve orders as quickly as possible.
It is also important to cooperate with the part-time staff who help us with our business.
15:00 Break
After the lunch rush is over, it is the so-called "idle time," or break time.
During this time, we prepare the missing ingredients and soup for the dinner time.
In addition, we place orders for ingredients that are about to run out. In between, we eat and take breaks.
17:30 Dinner time
In the evening and later hours, students on their way home from school and office workers on their way home are our main customers.
We strain the chicken white soup.
As closing time approaches, we gradually clean up the kitchen.
21:00 Closing time
Signboards are put away and the restaurant is thoroughly cleaned.
We check the sales proceeds and prepare for the next day's business.
22:00 Return home
After cleaning up, lock up the store, close the shutters, your shift is over and you can go home!
